3 Stunning Summer Salads to Make at Home

We’re excited to share a few of our favorite salads from our summer menu that you can whip up at home. Embracing seasonal produce and unexpected combinations, these EAT Club originals are perfect for creating a simple meal for one or impressing your guests at a summer gathering. Best of all, there’s no cooking required, so you can step away from the stove and beat the heat!

Caprese

A classic caprese is all about the fresh tomatoes and mozzarella — the components are simple, but the results are spectacular! To make it a meal, we put it on a bed of romaine lettuce and mixed greens. Last but not least, drizzle on a delicious herbed balsamic vinaigrette and dig in!

Balsamic Vinaigrette
1/2 teaspoon freshly ground black pepper
1/2 teaspoon freshly ground mustard seed
1/4 cup balsamic vinegar
splash of soy sauce
1/8 cup canola oil
1 teaspoon honey
1/4 cup water
1 small shallot, minced
1 clove garlic, minced
juice from 1/2 lemon
salt to taste
1 sprig fresh thyme, finely chopped
1 sprig fresh oregano, finely chopped

Salad
2 romaine hearts, roughly chopped
1 cup mixed greens
8–10 grape tomatoes
8–10 fresh mozzarella pearls
fresh basil garnish

 

Watermelon Feta

Start with a base of peppery arugula, then pile on the refreshing flavors of watermelon, cucumber, and a pop of peach in a unique vinaigrette. Top it all off with crunchy pecans and creamy feta and give your taste buds a real treat.

Peach Vinaigrette
1/4 teaspoon freshly ground black pepper
salt to taste
1 tablespoon cane sugar
1/3 cup white balsamic vinegar
1 large peach, chopped (fresh or frozen)
2 tablespoons olive oil
1/4 cup water

Salad
2 cups baby arugula, washed and spun dry
1 sprig basil, torn by hand
1/2 cucumber, sliced
1/8 seedless watermelon, cut in 1-inch cubes
1/2 cup pecans
8–10 ounces feta crumbles

 

Spinach Strawberry

Fresh berries meet spinach, red onions, walnuts, and goat cheese for a match made in salad heaven. This surprising combination of flavors comes together with minimal chopping, and a tasty poppyseed dressing ties it all together.

Poppy Seed Dressing
1 teaspoon poppy seeds
1–2 teaspoons cane sugar (to taste)
1 tablespoon granulated onion
1/4 cup apple cider vinegar
1 tablespoon dijon mustard
1/2 cup canola oil
juice from 1/2 lemon

Salad
2 cups baby spinach, washed and spun dry
1/8 onion, sliced
1/4 pint blueberries
1/4 pint strawberries, sliced
2 ounces goat cheese, crumbled
walnuts (to taste)
